Aurélien’s recipe: orange and ginger cookies

Nearly 40,000 pieces were sold in 2023: cookies from the bread and breadcrumbs recovery workshop are a staple of Partage’s recovery workshops in the fight against food waste.

Here’s the ingenious recipe for orange and ginger cookies lovingly crafted by our chef Aurélien. ⬇️

Recipe ingredients (for 65 cookies) :

  • 180 grams breadcrumbs
  • 116 grams flour
  • 160 grams sugar
  • 30 eggs
  • 15 grams yeast
  • 125 grams oil
  • 5 grams ginger or cinnamon
  • 80 grams orange powder
  • 10cl orange juice
  • A pinch of salt

To recycle your orange peels at home:

  • Arrange the orange peelings on a baking sheet, leave to air-dry or heat in the oven.
  • Stir every hour to remove moisture
  • Leave to cool and then grind the peelings: use them to garnish your dishes, herbal teas or cookies.
